However, since beginning her GLP-1 treatment in 2023, these once-loved flavors have become bland and muted. Loren's experience is not unique; many individuals taking GLP-1s report similar changes in their taste perception.

But here's where it gets controversial... While doctors acknowledge this side effect, the exact cause and extent of these taste alterations remain a mystery. A study conducted in 2025 by researchers at the University of Pennsylvania revealed that 85% of GLP-1 users performed worse on a taste test compared to non-users. All five basic taste categories were affected: salty, sweet, bitter, sour, and umami.

"It's a significant decrement in the ability to taste the basic taste qualities," says Richard Doty, director of the Smell and Taste Center at the University of Pennsylvania Medical Center. This condition, known as dysgeusia, is a well-documented side effect of GLP-1 medications, as confirmed by the manufacturers of popular GLP-1 drugs.

And this is the part most people miss... Despite the taste changes, individuals like Loren report an improved relationship with food and a healthier weight. So, the question arises: is the potential loss of taste worth the benefits of GLP-1s?

GLP-1s work by increasing the natural hormone GLP-1 in our bodies, which triggers insulin release and blocks glucose absorption. This process impacts the brain's hunger and fullness centers and, consequently, our taste perception. However, experts like Steven Munger, a professor at the University of Virginia, emphasize that the exact mechanism behind these taste changes is still unclear.

For some, GLP-1s may enhance certain tastes, making spicy foods more appealing. For others, like Morgan Williams, a mom from Lincoln, Nebraska, even mild seasonings can make food unpalatable. Williams now prefers plain sweet potato or salmon over flavorful meats.

"Everything is salty to me, even if I didn't put salt on it," Williams shares. This change has not only affected her own taste preferences but also her family's dinner routines, as she prepares separate meals for her son.

In contrast, Nicole Burton from Liberty, Kentucky, has experienced a shift towards enjoying spicy foods, much to the amusement of her friends. Burton, who has lost 120 pounds since starting GLP-1s, attributes this change to a "flip" in her taste buds.

A survey by International Flavors & Fragrances, Inc., in September 2025, found that 85% of GLP-1 users have undergone significant changes in their food preferences. Many have developed strong aversions to fatty, fried, and sweet foods, as well as coffee and alcohol.

"The lack of desire for certain foods is a big element of what people experience," Doty explains. "It's down-regulated, the whole taste experience... It makes things less interesting."

However, for individuals like Burton, this down-regulation has been a positive change, allowing her to finally enjoy eating and maintain a healthy weight.

"(Taste) now is more satiating," Burton says. "I'm craving things that actually fuel my body."

More research is needed to understand the role of genetics and the long-term effects of GLP-1s on taste. As Doty puts it, "We're just at the tip of the iceberg" in this new area of medical research.
